Task & responsibilities

Key Responsibilities:

As a Chef, your responsibilities will include managing and participating in the preparation and production of high-quality food while ensuring consistency and presentation standards across all kitchen sections.  You will supervise and support kitchen teams, including Commis Chefs, Demi Chefs, and Chef de Parties, ensuring compliance with recipes, operating procedures, and service standards.

You will assist in the daily kitchen operations, including rostering, food preparation planning, and service delivery, ensuring smooth and efficient operations across all outlets.  This includes overseeing mise en place, monitoring portion control, and minimising waste while maintaining stock levels and controlling food costs.

You will ensure strict adherence to food safety, HACCP, hygiene, and sanitation standards, maintaining a clean and organised kitchen environment and ensuring all equipment is properly used and maintained.

The role requires supervising and training kitchen staff, mentoring junior team members, and contributing to workforce development, performance management, and ongoing training plans. You will provide leadership, clear direction, and support to ensure a high-performing and engaged team.

You will monitor food preparation, kitchen operations, and service delivery to ensure compliance with Capella brand standards, including Forbes and LQA standards, and respond to guest feedback, enquiries, and complaints in a professional manner.

Additionally, you will assist in inventory management, ordering supplies, maintaining stock records, and ensuring efficient kitchen operations, while reporting maintenance issues and ensuring a defect-free working environment.

You will collaborate with other departments to ensure seamless service delivery, maintain strong communication, and contribute to menu development, innovation, and continuous improvement initiatives.

To be successful in this role, candidates must possess:

  • Relevant qualification: Diploma or higher in Culinary Arts or Hospitality Management
  • Minimum 3–5 years’ experience in a similar role within a luxury hotel or high-end restaurant environment
  • Proven experience supervising kitchen operations and leading teams
  • Strong knowledge of culinary techniques, food safety standards, and kitchen management
  • Experience in stock control, cost management, and menu execution
  • Excellent communication and leadership skills
  • Ability to work in a fast-paced, high-pressure environment
  • Commitment to service excellence and guest satisfaction
  • Full Australian working rights
  • Luxury hotel experience is highly desirable.
