Key Responsibilities:
As a Trade Waiter, you will be responsible for delivering professional and attentive food and beverage service in accordance with Capella Sydney's luxury hospitality standards. You will set up and arrange dining tables and service stations, manage reservations, greet guests, and present menus and beverage lists. You will provide knowledgeable recommendations on menu items, wines, and beverages to complement guests' dining selections, accurately take food and beverage orders, and liaise effectively with kitchen and bar teams to ensure timely service.
The role involves serving food and beverages, opening and pouring wines and other drinks, assisting with beverage preparation and cellar operations, and maintaining exceptional presentation standards throughout service. You will clear and reset tables, remove used crockery, glassware, and empty bottles, replenish glassware as required, and maintain cleanliness and organisation within all service areas. You will also process guest payments, operate point-of-sale systems and cash registers, and ensure accurate transaction handling.
In addition, you will assist with stock control, stock rotation, inventory management, and beverage storage, while adhering to all food safety, hygiene, workplace health and safety, and responsible service of alcohol requirements. You will work collaboratively with colleagues across Food and Beverage operations to deliver memorable dining experiences and contribute to a positive, professional, and guest-focused environment.
