At Ulmarra Hotel, the Cook is responsible for preparing, seasoning and cooking a variety of meals for our restaurant guests. Working under the supervision of the Chef, the successful candidate will help deliver high-quality food while maintaining food safety, hygiene and kitchen standards in a busy hospitality environment.


Benefits

Salary: $75,000 - $85,000 per annum plus superannuation


Task & responsibilities

  • Examining food ingredients and supplies to ensure freshness and quality prior to preparation and service.
  • Preparing and cooking a variety of meals in accordance with established recipes, kitchen procedures and service requirements.
  • Regulating temperatures of ovens, grills, fryers and other cooking equipment to ensure food is cooked correctly and consistently.
  • Seasoning and cooking meat, poultry, seafood, vegetables and other food items.
  • Preparing ingredients through washing, peeling, cutting, portioning and marinating as required.
  • Plating meals and adding garnishes, sauces and accompaniments in accordance with venue standards.
  • Monitoring food quality throughout preparation and service to ensure consistency and presentation standards are maintained.
  • Storing food in temperature-controlled facilities and ensuring correct stock rotation practices are followed.
  • Assisting with estimating daily food requirements and notifying the Chef of stock replenishment needs.
  • Preparing meals to accommodate customer dietary requirements and food allergy considerations when required.
  • Maintaining a clean and hygienic work area in accordance with food safety regulations and workplace procedures.
  • Cleaning kitchen equipment, utensils and food preparation areas as required.
  • Following workplace health and safety procedures and safe food handling practices at all times.
  • Assisting with the preparation of food for functions, events and peak service periods.
  • Working cooperatively with kitchen and front-of-house staff to ensure efficient service delivery.

Qualification & experience

Essential  

  • AQF Certificate III in Commercial Cookery or equivalent qualification; or
  • At least one year of relevant full-time work experience as a Cook.
  • Demonstrated experience preparing and cooking meals in a commercial kitchen environment.
  • Knowledge of food preparation techniques, food safety and hygiene requirements.
  • Ability to work efficiently in a fast-paced hospitality environment.
  • Ability to work flexible shifts, including evenings, weekends and public holidays.
  • Good communication and teamwork skills.
  • Strong attention to detail and commitment to food quality.

Desirable  

  • Experience working in a hotel, pub, restaurant or similar hospitality venue.
  • Knowledge of Australian pub-style dining and contemporary casual dining service.
  • Food Safety Supervisor Certificate or willingness to obtain one.
  • Experience preparing meals for large service periods and hospitality functions.
