Degani is a well known café restaurant chain and have always maintained its goodwill and profitability across Australia. We, Cafe Koo Wee Rup trading as Degani Cafe Koo Wee Rup,  are looking for a qualified and experienced Chefs and Cooks on full-time basis who are passionate about food and has ability to handle busy and pressure kitchen environment while maintaining the industry and restaurant standards.

 

Chefs responsibilities include (but not limited to):

  • Prepare, cook, serve and organise food
  • Plan menus and ensure proper portion size and quality of food
  • Estimate amounts and costs of required supplies, such as food and ingredients
  • Inspect supplies, equipment, and work areas to ensure conformance to established standards
  • Instruct cooks and other workers in the preparation, cooking, baking, garnishing, and presentation of food
  • Meet with sales representative to negotiate prices and order supplies
  • Monitors the portion and waste control to maintain profit margins
  • Keep an eye on latest cooking trends and on business to ensure good customer service
  • Check freshness and presentation of food
  • Analysing the recipes to assign prices to menu items based on food, labor and overhead costs
  • Ensuring that all the area of kitchen is kept clean and hygienic (OH&S compliance)
  • Monitor sanitation practices to ensure that employees follow standards and regulations
  • Competent in food quality checks
  • Manage temperature logs for ovens and freezers
  • Prepare food according to customers need i.e. dietary requirements
  • Informs wait staff of the daily specials and delegates the tasks to the kitchen staff
  • Inspecting proper utilisation and operation of all equipment and utilities
  • Arrange for equipment purchases and repairs
  • Meet with customers to discuss menus for special occasions such as weddings, parties, and banquets
  • Discuss food preparation issues with Manager, kitchen and waiting staff

 

 

Cooks responsibilities include (but not limited to):

  • Prepare, season and cook food as directed while meeting dietary requirements as required
  • Portioning food, placing it on plates, and adding gravies, sauces and garnishes
  • Follow recipes and presentation specifications
  • Operate standard kitchen equipment safely and efficiently
  • Monitor quality of dishes at all stages of preparation and presentation
  • Prepare and use specialized kitchen equipment for use
  • Communicate with other staff members of the kitchen team and food service staff
  • Work cooperatively with other members of the kitchen team
  • Demonstrate a high standard of personal hygiene
  • Ensures high standards of sanitation and cleanliness are maintained throughout the kitchen
  • Skills in a wide range of cookery methods to produce a range of menu items
  • Minimise food spoilage
  • Examine the food items to ensure high quality of food
  • Help plan menus and estimate food requirements for menu
  • Storing food in cool room in appropriate section
  • Clean and organise kitchen and equipment in adherence to hygiene and safety regulations
  • Preserve and store foodstuffs in appropriate temperature-controlled facilities

 

Skills and experience 

  • You must be fully qualified - AQF associate degree, Certificate III, Certificate IV, or Diploma certification in relevant Hospitality qualification.
  • You must have proven experience as a Chef/Cook for at least one year in a busy kitchen 
  • Experience in the smooth running of food service for the entirety of the shift
  • Creative and Proficiency in rostering, cost control & food safety management
