Position Description

The Cook is responsible for preparing and cooking a variety of meals in accordance with venue standards, recipes, and food safety requirements. The role requires the ability to work efficiently in a fast-paced hospitality environment while maintaining food quality, presentation, and kitchen cleanliness.

Task & responsibilities

  • Prepare and cook a wide range of meals offered by the Telegraph Hotel, including modern pub-style dishes, shared plates, grilled items, seafood dishes, desserts, bar meals, and function catering menus.
  • Assist with food preparation and service across the hotel’s dining areas, rooftop terrace, bar service areas, and private function spaces.
  •  Prepare meals for restaurant guests, social events, private functions, corporate gatherings, celebrations, and rooftop hospitality events hosted by the venue.
  • Examine meat, seafood, vegetables, sauces, dairy products, and other ingredients to ensure freshness, quality, and compliance with food safety standards.
  • Regulate and monitor temperatures of ovens, grills, fryers, and other commercial kitchen equipment to maintain consistency and safe food preparation during high-volume service periods.
  • Prepare and cook menu items in accordance with venue recipes, portion controls, presentation standards, and customer expectations.
  • Portion and present meals attractively with sauces, gravies, garnishes, and accompaniments in line with the hotel’s hospitality and dining standards.
  • Assist in preparing seasonal menu items, event packages, canapes, shared-style menus, and specialty dishes offered for functions and rooftop dining experiences.
  • Prepare meals to accommodate customer dietary requirements, food allergies, and special requests while maintaining quality and consistency.
  • Store food in temperature-controlled facilities and ensure proper stock rotation, labelling, and storage procedures to minimize food wastage.
  • Assist with estimating food requirements, monitoring stock levels, and advising kitchen management on ingredient shortages and ordering requirements.
  • Maintain cleanliness and organisation of kitchen workstations, cool rooms, food preparation areas, utensils, and equipment in accordance with workplace hygiene and food safety regulations.
  • Support efficient kitchen operations during busy lunch, dinner, function, and event service periods by coordinating effectively with chefs, kitchen staff, and front-of-house employees.
  •  Follow workplace health and safety procedures, food handling standards, and company policies at all times.
  • Assist with training junior kitchen staff and apprentices in food preparation techniques, safe food handling practices, kitchen procedures, and presentation standards.
  • Contribute to maintaining the Telegraph Hotel’s reputation for quality dining experiences, customer service, and hospitality excellence.


Qualification & experience

  • Relevant qualification in Commercial Cookery or related field, or equivalent industry experience.
  • Experience of 1 year working in a commercial kitchen or hospitality environment.
  • Knowledge of food preparation techniques, kitchen operations, and food safety practices.
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Strong attention to detail and commitment to food quality and presentation.
  • Ability to work collaboratively within a team environment.
  • Good communication and time management skills.
  • Understanding of workplace health and safety requirements.
